Bean and Cheese Quesadillas
I always wonder what people really eat for dinner… what are their go-to meals for a busy weeknight? This is something we eat at least once a week. My kids love the homemade re-fried beans spread on a freshly cooked tortilla and warmed with a bit of shredded cheese. Alexandra made the bean and cheese quesadillas in the photo and she went a little light on the beans. I usually add more to give them the protein they need. In the past I made plain quesadillas but adding the beans adds a lot of nutrition to the meal. The prepare have very little fat and are savory and satisfying. When it is cooler, I make flour tortillas from scratch. Today I am using the Costco uncooked tortillas and the cost of this meal is still less than a dollar per person.
Bean and Cheese Quesadillas
- Refried Beans
- Shredded Monterrey Jack & Cheddar cheese mix
- Uncooked flour tortillas
Start by cooking the tortillas on a hot skillet. Cook one side, and once it is covered in bubbles and small brown spots flip. Add a layer of refried beans to the cooked side, then a sprinkling of shredded cheese. Fold over and continue heating until tortilla is cooked through and cheese is melted. Serve with hot sauce.
