Peach Syrup
Peach Syrup
- 2 Tablespoons lemon juice
- 2 cups Sugar
- 2 tsp Vanilla (optional)
- 5 cups Peaches, peeled, pitted, and pureed in blender
Over medium heat combine peach puree, sugar and lemon juice. Heat to a boil then reduce and simmer for 5 mins stirring frequently. Remove from heat and add vanilla.
Pour into sterilized jars, leaving 1/4″ headspace at the top of each jar. Wipe all the rims with a clean cloth and center the lids. Add the bands and tighten to finger tight (so some air can still escape).
Process in a boiling water bath for 20 minutes or a steam canner for 15 minutes.
Makes about 3 pints. Tastes great over whole wheat waffles or whole wheat pancakes. Thanks Jeni Reid for this recipe.
