Fiesta Pasta Salad
- 18 oz. tri-color rotini noodles (1 1/2 twelve oz. boxes)
- 1 cup light mayonnaise
- 1/3 cup milk
- 1 Tablespoon chili powder
- 1 package Hidden Valley Dips Fiesta Ranch
- One 15oz can black beans, drained and rinsed
- One 15oz can corn, drained and rinsed
- One small 2.25oz can sliced black olives, drained
- 1-2 avocados, cubed
- 2 small tomatoes, seeded and cubed
- 1/4 cup red onion, diced
- 1/4-1/2 teaspoon salt, to taste
Cook noodles a dente. In a large bowl, combine mayonnaise, milk, fiesta ranch powder, and chili powder. Pour cooked noodles into mayonnaise mixture. Add black beans, corn, olives, avocado, tomato and red onion. Mix gently. Taste and season with salt. This is great for summer barbecues. We often serve this as a side dish with grilled Yoshida chicken.
