How to Roast Pumpkin Seeds
- 2 cups pumpkin seeds
- 1 Tablespoon butter
- 1 teaspoon salt
- 1 teaspoon Worcestershire sauce
Bring a large pot of water with a teaspoon of water to a boil. Wash seeds from a fresh pumpkin and remove any remaining pulp – or “guts” as my kids call it. Boil washed seeds in the salted water for 15 minutes. Drain pumpkin seeds. Place in a large bowl and mix with butter, Worcestershire sauce and salt. Pour onto a baking sheet and toast seeds for approximately 2 1/2 hours at 250F stirring every 30 minutes. Toast until the pumpkin seeds are golden. If you put more than 2 cups of pumpkin seeds into the pan this may take longer.
We will be carving our pumpkins this evening so we will be making this healthy snack. The pumpkin seeds will roast as we are finalizing the details on the Jack O’ Lanterns. Happy Almost Halloween!
