Fruit Pizza Tart

Fourth of July is almost here and I thought about a recipe I made several times — over 10 years ago!  The original recipe was entitled Fruity “Pizza” tart and it is another cookie “pizza” with a simple sugar crust, a layer of sweetened cream cheese, fruit and a bit melted apple jelly for presentation and preservation of the fruit.  For the July 4th variation use blueberries, strawberries and bananas as pictured above.  Throughout the year use any seasonal fruits to make a lovely presentation.  Mini versions of this same recipe can be made in small tart pans.

Fruit Pizza Tart

Crust:

  • 2 cups flour
  • 4 T confectioners’ sugar
  • 1 cup butter

Cream Cheese layer:

  • 8 oz cream cheese
  • ½ cup granulated sugar
  • 1 tsp vanilla

Fruit Layer:

  • Any combination of fresh or canned fruit.
  • Apple jelly, melted

To make crust, cut all ingredients together like you would when making a pie crust  This can be done in seconds using a food processor.  Roll dough into a ball and chill for 30 minutes.  When chilled, gently press into a pizza pie pan.  Bake at 400 degrees for 10 minutes; allow to cool.

Meanwhile, make the middle section by mixing together all ingredients until light and fluffy.  Spread over baked crust.  Warm and melt apple jelly in a small saucepan.  Allow thinned jelly to cool.  Top with an arrangement of fresh or canned fruit, brushing the apple jelly on top of the fruit to glaze.  Chill for 2 hours and serve.  When using bananas, be sure to have the apple jelly melted and cooled as soon as the bananas are sliced so they do not discolor.
