Spinach Berry Smoothie
It is hot outside – I am 36 weeks pregnant and a smoothie is the only thing that sounded good today. Since I have been living off Popsicles and Otter pops I thought I could use a few nutrients today. So I decided on a smoothie with spinach. The way to hide the spinach is to first blend it very well, until no little bits remain. It will be a lovely green. From there, add a berry mix that includes either blackberries, blueberries or mulberries. Natural food dye at it’s best. Unfortunately Timmy came in at the green phase and said “Ew!!!! Gross!!!!”
The recipe is for a double batch. I freeze any leftovers and serve as Popsicles.
