Breakfast Burritos
This is sort of an un-recipe. I am adding this to my main dish category as a reference for easy meal ideas. This is one that is really easy and the entire family loves. Just start with homemade or uncooked flour tortillas cooked lightly. Fill with whatever your family loves. For us the tortilla is usually filled with scrambled eggs, shredded cheese, refried beans, grilled peppers and onions. Other filling options include cooked bacon, cooked sausage, cooked hash-browns, or cooked chorizo. After the breakfast burritos are filled place the burritos back on a skillet for additional browning. We serve this with salsa and sometimes just ketchup. This is very easy to prepare in less than fifteen minutes on a busy weeknight. I usually make extra, wrap them in saran wrap and freeze for an on-the-run meal. When you’re ready to eat, unwrap the burritos, wrap loosely in microwave safe paper towel and heat in the microwave on high power for 1-2 minutes until hot and cheese is melted.
Breakfast Burritos
- Uncooked flour tortillas
- Filling options: scrambled eggs, shredded cheese, choice of cooked meat; sausage, bacon, ham or chorizo, refried beans, grilled peppers and onions, hash- browns.
Cook the flour tortillas until light brown spots appear. Do not over cook or you will be unable to fill the burritos. Set aside. Place a layer of refried beans, followed by scrambled eggs, shredded cheese, cooked breakfast meat, grilled veggies or hash browns. Any combination of toppings will work and depends on your preference. After filling roll the burritos carefully (be sure not to overfill!) Place back on the warm skillet and cook the breakfast burritos again. Serve immediately. If desired cover in saran wrap and freeze to eat later. As directed above, when you’re ready to eat, unwrap the frozen burritos, wrap loosely in microwave safe paper towel and heat in the microwave on high power for 1-2 minutes until hot and the cheese is melted. Serve with fresh salsa, hot sauce or ketchup.
