Cherry Cheese Pie
This Eagle brand cherry cheese pie is a family favorite. My mother-in-law makes this for us when we she comes to town and my kids have renamed it “grammy” pie. We love this for summer because it is an easy no-bake dessert. Buy a ready made crust and this dessert will be ready in minutes. For best results use freshly squeezed lemon juice. Make sure to take the cream cheese out of the refrigerator ahead of time. You could vary with different types of pie filling for the top layer. I am sure there is a better homemade everything version of this dessert, but no one is complaining so for summer we will stick with this simple no-bake treat.
Cherry Cheese Pie
- 1 (8 ounce) package cream cheese, softened
- 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
- 1/3 cup lemon juice
- 1 teaspoon vanilla extract
- 1 (8- or 9-inch) baked pie shell or graham cracker crumb crust
- 1 (21 ounce) can cherry pie filling, chilled
Remove cream cheese from the refrigerator hours before preparing. Squeeze fresh lemons, if available. In large bowl, beat cream cheese until fluffy. Gradually beat in EAGLE BRAND® sweetened condensed milk until smooth. Stir in lemon juice and vanilla. Pour into crust; chill 4 hours or until set. Top with desired amount of cherry pie filling before serving. Store leftovers covered in refrigerator. Serve chilled.
