Apple iTunes Cookies – Teacher Appreciation Day Cookies
An Apple for the teacher! I made these cookies for Teacher Appreciation day. I thought they would be perfect to go along with the iTunes gift card I purchased for each of my kids teachers. These were so simple. I baked several two inch chocolate squares, iced them in a rich meringue buttercream icing, then used silver royal glaze for the apples. Once the apples dried, I gave each one a metallic sheen by carefully painting on silver metallic airbrush paint. These were perfect teacher appreciation day cookies.
Step 1 – Apple iTunes Cookies – Teacher Appreciation Cookies – Prepare dough and bake cookies
I used one of my favorite recipes to make these chocolate roll out cookies. This recipe can be found at this post. For convenience I will copy and paste the recipe here.
- 1 cup butter
- ¼ cup shortening
- 1 ½ cups granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 teaspoon salt
- ¾ teaspoon baking powder
- 2/3 cup cocoa
- 3 ¼ cups flour

You could use whatever icing you are comfortable with for these teacher appreciation cookies. I wanted them to be really rich so I made the white base layer in a meringue buttercream icing. The recipe for the meringue buttercream icing can be found here. Prepare the icing as directed in the recipe and thin so that is has a honey like consistency. I was not worried about my base layer being perfect so I added the icing using an off set spatula.
For the apple details, I used royal glaze icing dyed gray by using just a little bit of black food coloring. The recipe for royal glaze icing can be found here. I made a one consistency icing, that had the thickness of molasses. This type of icing will not hold a peak, but a streak in the icing will disappear after about 17/18 seconds. Use whatever recipe you prefer. Lately I avoid regular royal icing because it ends up so dry.
Step 3 – Apple iTunes Cookies – Teacher Appreciation Cookies – Decorate Cookies
As stated above, I decorated this teacher appreciation cookie by first frosting the cookies with white meringue buttercream icing. Once the icing is slightly dry I added the apple. If the base layer is dry, you could cut out the apple logo and trace it onto the cookie first to get it just right. You could also make a royal icing transfer ahead of time. I used my kopykake for outlining the apple and piped it directly onto the cookie. There are so many different ways to make this cookie. Do what ever recipe you feel most comfortable with. If you have never decorated sugar cookies before I would start with the royal glaze icing for both the white and the gray.
I allowed the apple on the teacher appreciation cookie to dry overnight. In the morning, it was completely dry and I painted it with silver metallic airbrush liquid. You could also use silver wilton decorating powder mixed with vodka or lemon extract. The airbrush liquid is so easy to use because it is ready to go. These teacher appreciation cookies had such a nice sheen to them, the photos do not do justice.
Step 4 – Apple iTunes Cookies – Teacher Appreciation Cookies – Packaging
I gave my kids’ elementary school teachers one dozen of these teacher appreciation cookies, and packaged them in a small bakery display box. Each cookie was individually heat sealed and placed on top of shredded paper.
I placed an iTunes giftcard with this box of teacher appreciation cookies. I hope the teachers liked these cookies as much as I do! If not, they is an iTunes giftcard to go with it.
My daughter has seven different middle school teachers, So I gave them each a single, individually wrapped cookie along with an iTunes card. I felt like it was something special to add to the giftcard.
I always have $10 iTunes giftcards on hand for unexpected birthday parties. I think I may make more of these cookies, individually wrap and freeze them to go with the giftcards when my kids give them to their friends. I hope you get a chance to make these!
